I wish I could say that I am doing the Whole30 perfectly, but I am not. There is always something you don't know or forgot about when you were reading, but the point is that you do your best and test your will power and learn all about the physical, mental and emotional aspects that affect how and why we eat the way we do. Nutrition Psychology folks. So fascinating.
Today I bring you the Pitaya Bowl because I needed a change from scrambled eggs, sweet potato hash and sautéed greens, so I went the completely opposite direction. I was in San Diego a few weeks ago and was inspired by all of their acai and pitaya bowls, so I set out to create an amazing Whole 30 compliant one!
1 packet of frozen dragon fruit pitaya (sold in the frozen section of your natural foods store)
1 frozen banana
1/4 cup canned coconut milk/cream
2 cups packed spinach or blend of power greens
1/2 cup water
1) Place all of the ingredients in blender and blend until smooth but still thick. You want a thick, shake like texture so that you can eat it with a spoon. If it comes out to liquid-y, then just make it a smoothie with toppings! Still good :).
2) Sprinkle toppings over it. You can choose whatever you want on top or substitute granola. I chose these specific ingredients because they added a nice crunch and offset the sweetness of the pitaya perfectly.
3) Remove face from the bowl after you are done licking it clean.
